Flat bread begins

I'm not sure why I decided to start messing around with flat bread, but I was bitten by the curiosity, so I gave it a try. I remember when I was young, my grandma would make chapatti's over the gas burner on the stove top. They would balloon up as she juggled them in her hands over the flame.

First, I made Naan bread. I was going for chapatti's but I couldn't remember the name, so the only recipe I found with a similar description was Naan. The unique thing about this bread is that it calls for yogurt instead of water. WONDERFUL! I make my own! To my knowledge, this bread turned out great (though I didn't poke holes in it with a fork as traditional). I had a slight tang to it from the yogurt, was chewy, and I loved it.

Next, I tried Chapatti's. I found a recipe off of the internet, and followed it's very vague directions. Since I have an electric stove, I used the cast iron pan as recommended. Well, they turned out as oily pancakes. I'm not sure I did it right, and I didn't like them too much. Sorry grandma.

Finally, last night I tried pita bread. To keep it short, they didn't balloon up either. So now I have a good amount of semi cooked, pale, floury, flat cakes of dough.

HELP! I'm not sure I'm done trying flat bread (since I did like the Naan bread), but I could use some advice. Anyone?

You need a couple dachshunds, Tyler. They'll consume with gusto any failure you can produce that is animal, mineral, or vegetable.
