Ginger Ale in December

Just before the last bottle of this batch was consumed, I took a picture of it. Here it is folks. Bottled, capped, and posing for it's 15 minute of fame.

I'm a bit behind now that the Christmas season is over. In fact, I was able to make, a whole batch of Ginger Ale and then drink all but one bottle before now. And that last bottle is promised to a co-worker.
I find it interesting how the ginger mellows over time. When I first made the flavoring, I used two hands of ginger and a couple pinches of red pepper flakes. After the 30 min brewing, I tasted it and it was good, strong, and a bit spicy.
So, after the bottling, I was curious to find that it had mellowed out. It had no bite. I guess I need to strengthen the flavoring.

Something else that I tried this time and loved was because of the root beer batch that exploded. I let the ginger ale carbonate in 2-liter bottles (plastic, stretchy, obvious if they expanded), then I siphoned the soda into glass bottles. This way I could tell if they were "done" and yet I still get by glass bottle effect. Once in glass, I don't worry about consuming them before they blow. But I recommend this.
