New Root Beer Batch

My recipe (for one 2 liter bottle):
1 cup sugar
1/8 tsp. yeast
1 1/2 tsp. root beer extract
2 liters water (fill to 1" of top)

Before I made my first root beer, I browsed the internet looking for different recipes and methods. I wanted old fashioned, I wanted homemade, I wanted original. So, though I've used extracts for most of my attempts, I've tried to be as old fashioned as possible. It almost seemed scientific and basically too fussy. When I wanted to make a batch, it took a couple of hours: wash the bottles, sterilize the bottles and utensils you'll be using, mix water (that's been sitting in the window to let the chlorine dissapate) and flavor and sugar into a large pot (sometimes I boiled the water first to sterilize), in a smaller container proof the yeast, mix the yeast with the large pot, stir, bottle 2 bottles, stir again, bottle more, stir, etc. This was drawn out, messy, sticky, and made tons of dishes.

Last night, I tried this guys method. I used two 2 liter bottles, a funnel, and measuring utensils. That was it! I sterilized the bottles with liquid concentrate sterilizer (no rinse stuff I bought from a hobby brew shop), then I added the sugar, yeast, and extract to the bottle, and finally, I filled the bottles with tap water. It was quick and easy and made very little dishes. I placed the bottles on top of my fridge last night and squeezed them this morning... it's working!!!

This is much easier than 12 ounce bottles filled one at a time, and much cleaner. Granted, I really like the effect of brown glass bottles that have been capped. So, I plan to transfer the soda into them after they do their thing in the plastic bottles (since plastic is by far saffer than glass). I had 10 glass bottles turn into hand grenades. They just blew one after the other sending sticky glass shards everywhere.

It's been what, three days now? Sunday - Monday, Monday - Tuesday, Tuesday - Wednesday... ok, three tonight. Well the bottles are stiff as of this morning. Then they hit the fridge for the rest of 1 week (2 for better flavor and less yeastiness). I'm excited to check them.
I used two different extracts; one for each bottle. "Rainbow" brand and "McCormick" brand. I don't like the aftertaste of the "Rainbow" brand, but it's OK. I can't wait to try the McCormick.

I plan to rebottle from the 2 liter bottles into glass 12 ounce bottles. I like the look of them better and they are single serving where the 2 liter would become too ripe before I finish it.
Plus, I can avoid some of the sediment by siphoning the root beer into the bottles. It'll be fun.

Well, it turned out well. It wasn't as carbonated as previous batches and I don't know if that was a result of moving it to glass bottles, or if it never finished in the 2-liter bottles. But, it was good and the yeast odor and flavor was reduced. Maybe next time I'll filter it too. Anything to reduce the yeastiness.

Oh, and the McCormick extract was far better than the Rainbow stuff. Rainbow extract tastes too medicinal and has a bad aftertaste.
